• دراسة تأثير التفاعلات بين النشاء والبروتين والبوليفينول على صحة الأنسان وجودة المنتجات الغذائية.
• توظيف الحبوب والبقول النوعية و طرق التصنيع الحديثة لتطوير وابتكار أغذية تدعم الاستدامة والأمن الغذائي وتساعد على تحسين صحة الإنسان.

Research interests

• Investigating the impact of starch-protein-polyphenols interactions on human health and product quality.
• Leveraging the versatility of grains (e.g. sorghum) and pulses with advanced processing technologies to develop sustainably foods (e.g. novel baked products, plant-based meat alternatives) to enhancing human health.
