FSN (439) Meat Science and Technology
This course are designed to cover the following objectives:
- Understanding the principles of Meat Science and Other related fields.
- Be familiar with different animal slaughter methods.
- Understanding how muscles converted to meat
- Be able to Identify standard meat cuts, and factors affecting meat quality and safety before and after slaughter.
- Gain knowledge about poultry slaughtering, processing and packaging.
- Understanding the application methods used in processing of meat, poultry and fish products.
- Be familiar with methods apply to preserve and store meat, poultry, fish and their products.
