Biochemistry of Nutrition 

Description: introduces the concepts of the composition of foods, and how the processing of food affects sensory appeal, shelf life and nutrient composition (risks and prevention) .
Also allows students to understand the functions of nutrients in the production, quality and consumption of foods and how they are to be prepared consistent with food safety precautions.
